Fattoush Salad (serves 6)
Ingredients
· 3 hearts of romaine lettuce chopped
· 1 cup thinly sliced radishes
· ½ cup diced red onion
· 1 cucumber, peeled and diced
· 2 cups diced tomatoes
· ½ bunch parsley, chopped
· ¼ cup finely chopped mint
· 6 garlic cloves, minced
· 2 teaspoons coarse salt
· 2 teaspoons of freshly ground black pepper
· ¼ cup fresh lemon juice
· 5 tablespoons extra virgin olive oil
Method
In a large serving bowl, mix together first 7 ingredients. In a small bowl, whisk together garlic, salt, pepper, lemon juice, and olive oil. Stir into salad.
All day breakfast sandwich
Ingredients
· 2 slices malted grain or wholemeal bread
· 50g egg mayo
· 1 cooked sausage
· Dollop of real mayo
· 4 rashers cooked bacon
· Good squirt of tomato ketchup
· 4 slices tomato
· 1 handful mustard and cress
Method
Spread the egg mayo on one slice of bread, using two forks. Slice the sausage lengthways into four strips and arrange on the bread. Spread the real mayo over the sausage slices – this time using a spatula. Arrange the bacon slices on top of the mayo. Squeeze some ketchup across the top of the bacon. Fit the tomato slices neatly over the four quarters of the sandwich and top with a generous helping of mustard and cress. Add the second slice of bread. Press gently to fix everything together. Slice and eat.
